♥ DESCRIPTION: Superb copper jam pan with two handles from the late 18th / early 19th century. Slightly rounded bottom, rolled edge, and upright copper handles. This magnificent basin can make a nice decoration in the kitchen or be used to make delicious homemade jam. Remember that jam basins, like sugar pans or white basins, are never tinned. Many 19th century cookbooks recommended these copper basins, particularly for red fruit jams. The copper actually promotes the setting of jams, preserves the natural color of the fruits which do not brown and transmits heat very well in a uniform manner allowing homogeneous cooking. Rare small size which confirms the luxurious and rare character of 18th century jams. In fact, at that time, sugar, exclusively cane, came mainly from the West Indies and Brazil. The apothecaries have a monopoly on the sale. With the discovery of beet sugar in the 19th century, and its lower cost price, jams became more democratic, at the same time as the size of the basins increased. ♥ DIMENSIONS: 5 x 10.5” /// 12,5 x 27 cm (Height x Diameter) ♥ WEIGHT: 3.5 lbs /// 1.6 kg ♥ STATE: very good, the jam bowl shows some signs of use like small stains, slight bumps and micro scratches, as we can expect from an old artisanal piece like this (refer to photos).
